About our Masa and Tortillas
It is our belief that the best dishes start with the best ingredients, and one of the most important ingredients in a taco is the tortilla.
To make our corn tortillas we start with local, non-GMO corn which we cook and then grind between two large volcanic stones to create our masa. This ‘from-scratch’ process allows us to omit additives, preservatives, and anything else that might get added to store bought tortillas.
From there we transport the fresh masa to each of the restaurants, where it is rolled out and cut by hand into the perfect shape and size. We cook each one on a flat top grill for about a minute, giving it a wonderful texture that is impossible to beat. Not only are these tortillas better for you, they are most delicious you are likely to find!
